Brownies Galore!

I have been trying out different brownie recipes, and I managed to yield 2 different results, with 2 different recipes. Both are not bad but I guess its personal preference of which you prefer. So here are my results!
Using the traditional recipe by melting butter with Valrhona's 55% chocolate, I got a nice gooey and sweet brownie.

 And melting butter with cocoa powder, I got a fudgy double chocolate brownie! This one doesn't look like a traditional brownie too. But it is really chocolatey and it is not sweet at all.

Japanese Cheese Cake

I have always wanted to make this cheese cake because I love it's velvety smooth, creamy as well as fluffy texture. I finally managed to try it today and I was glad that it turned out great! :) The cake didn't sink nor crack at the top and it did not shrink much after cooling. Phew! Do join us at Cake Over Heels as we will be conducting this class in December! :)

First on the Choux

Choux pastry, or pâte à choux is pronounced as shoo pastry or pah ta shoo. After watching Adrinao Zumbo with his Croquembouche on Masterchef Australia I was immediately inspired! So this is my first on cream puffs using his recipe. I always thought that cream puffs were difficult to make, but I was wrong! I did not even had to use my Kitchen Aid. oh Joy! I love the black dots on the pastry creme, they are real vanilla beans. The choux pastry looks a little dark on the picture thou, I was so afraid that the pastry would not rise after reading from so many sources. So being very paranoid, I baked the pastry a little longer. Will improve on it the next round! and will try it out with chocolate pastry creme. Yums!

Strawberry Shortcake Shots

Decided to try my hands on something different. Instead of doing cupcakes, i decided to try my hands on some Japanese strawberry shortcake. Normally the cake should be covered with whipped cream but i've decided to change it to cream Chantilly as I like the texture and taste of it better.  I thought the cake would look better in shot glasses. It would be easier for serving as well.

To top it of, I made strawberry tea with the extra strawberry fillings I had left. It was simple. Just boil a normal glass of black tea and add the strawberry fillings in it. Allow the strawberries to infuse into the tea and add sugar to taste. I love this tea because it has the natural taste of the strawberries. A perfect afternoon tea; strawberry shortcake shot with strawberry tea :)

Chocolate Lava Cake

I had to make these cakes at least once my entire life! Yummilicious chocolate lava cake! I love them! If I owned a cafe, it would definately be part of my menu :)
